The best guacamole recipe is one that uses fresh, flavorful ingredients. Avocado, cilantro, lime juice, and salt are all staples of the classic guacamole recipe, but many of us like to add a little extra flair with some tomatoes, red onion, and garlic.
This perfect chunky guacamole recipe is for those of us who love a little crunch and texture when we dip and dunk.
In my opinion, it's the best way to enjoy this classic recipe, and I know you're going to love it too!
Ingredients
- Avocados: Look for ripe avocados that are slightly pliable, but still firm.
- Red onion: This is a signature pairing, but if you don't like red onion you can use a sweet onion instead.
- Tomatoes: Select Roma tomatoes, which have fewer seeds. These won't water down your guacamole like standard slicing tomatoes.
- Lime juice: Fresh lime juice has the best flavor, but bottled can be used in a pinch.
- Cilantro: For those of us who love cilantro, this is a must!
- Garlic: A little bit of fresh minced garlic compliments the other flavors perfectly. Pre-minced garlic (AKA jarlic) works fine here, as does fresh. If you don't like garlic in your guacamole, leave it out.
- Salt and pepper

How to Make Chunky Guacamole
Step one: Mash the avocados well with a potato masher (or avocado masher) in a medium bowl. Go for super smooth or chunky avocado - it's your choice!
Add the tomato, red onion, garlic, salt, pepper, lime juice, and cilantro.
Step two: Stir everything together until well combined. Taste and adjust seasonings to your liking.
Serve immediately, or cover the bowl tightly and chill until you're ready to serve.
Top tip: Reserve about 1 tablespoon of tomato, 1 tablespoon of red onion, and a pinch of cilantro for garnishing the top of the tip (if desired).
Shortcut Options
Pico de Gallo: Use ½ cup of prepared pico de gallo in place of the tomatoes, onion, cilantro, lime, salt, and pepper. Stir and adjust seasonings to your taste.
Store-bought guacamole: I have tested this recipe with a container that I jazzed up with fresh ingredients. It turned out great, and there were no problems with browning.
How to Keep Guacamole From Browning
Freshly made guacamole oxidizes pretty quickly, which is why we are always looking for the next big tip to prevent it from browning!
Here are a few of the most common "hacks":
- Avocado pit. This involves leaving the avocado pit in the finished guacamole. I haven't found this to be very effective in my own trials.
- Lime juice. Almost all guacamole recipes have lime juice, and it does slow down oxidization to a degree - but not very effectively.
- Lemon juice. Some people say that adding lemon juice prevents browning more than lime, but I'm not a fan of altering the flavor that much.
- Salt. I've seen some tests where avocado browns once salt is added, but stays green for longer if there is no salt. In my opinion, the salt is really necessary and I won't remember to mix it in just before serving. So this one is a no go for me.
- Plastic wrap. This is the method I use most often. Simply cover the bowl or container with plastic wrap, and press it down onto the surface of the guacamole. Then top with a lid or another layer of plastic wrap.
- Water. I haven't tried this myself, but apparently if you add about an inch of water on top of the guacamole, it will seal off oxygen and prevent browning. When you're ready to serve, pour off the water, stir, and enjoy!
Storing Leftovers
Transfer your leftover guacamole to an airtight container or bowl. Using either the plastic wrap method, or the water method (see above), cover it tightly and store in the refrigerator for 1-3 days.
Can guacamole be made ahead of time?
For the best results, prepare your guacamole no more than 8 hours before serving to guests at a party or potluck.
If you're preparing guacamole for your own enjoyment or meal prep, you probably don't mind a little browning. Use one of the preservation methods listed above, and you should be good for up to 3 days.
Can I freeze guacamole?
Guacamole does freeze well. I recommend using something like Souper Cubes to freeze portions, and I also recommend that you leave out the tomatoes, and red onion. If desired, add fresh onions and tomato once thawed.

Easy Chunky Guacamole
Ingredients
- 2 avocados mashed
- 1 teaspoon minced garlic
- ¼ cup minced red onion divided
- 2 tablespoons lime juice
- 1 tomato diced (divided)
