    Baked Breakfast Sausages

    These Baked Breakfast Sausages are the perfect solution for breakfast, brunch, or meal prep. The best part? They take minimal work and clean-up is a breeze!

    If you're a big fan of breakfast foods, you really need to try swapping your frying pan for a baking sheet!

    I've already shared my recipe for oven baked bacon (and sweet and salty candied bacon), but today I'm sharing with you how to make another breakfast staple in the oven.

    These baked breakfast sausages are crispy on the outside, juicy on the inside, and hands down our favorite way to prepare them for any occasion (although air fryer breakfast sausages are a close runner-up).

    Why You'll Love This Recipe:

    1. No watching the stovetop. Since these aren't made in a traditional pan, you can just pop them in the oven and forget about them until the timer beeps.
    2. Great for meal prep. You can do a small batch for the week ahead, or do a larger batch and freeze for later.
    3. Perfect for big gatherings. If you're hosting a holiday breakfast or brunch, these baked breakfast sausages are a real time-saver.
    4. Freezer friendly. These freeze wonderfully, and can be reheated in a microwave or air fryer for a quick high protein breakfast option.

    You Will Need:

    A package of uncooked breakfast sausages on a marble counter.
    • Breakfast sausages: Use your favorite brand and flavor, so long as they the typical breakfast sausage size (large sausages will require longer baking times).

    Recommended Tools

    • Baking sheet: If you're making a single package, a quarter-size sheet pan is the perfect size. If you're making 2 or more packages, a typical sheet pan (often called half-size) is the best option.
    • Oven-safe wire rack (optional): Keeping the sausages elevated helps to give them even browning and prevents them from laying a pool of rendered fat. Using a rack is optional, but recommended.
    • Parchment paper (optional)
    • Tongs

    How to Make Breakfast Sausages in the Oven

    These oven baked breakfast sausages are my favorite way to prepare a large amount for a crowd or for meal prep. I also have a recipe for air fryer breakfast sausages which works great for smaller batches.

    1. Fit a parchment-lined sheet pan with an oven-safe baking rack if you have one.
    2. Place the breakfast sausages on the wire rack (or directly on the pan), leaving some space in between each one to allow for even cooking.

    1. Bake in a 425ºF (218ºC) oven for a total of 14-16 minutes, turning the sausages halfway during the baking time.
    2. The sausages are done cooking when they have an internal temperature of 165ºF (74ºC).

    Pork is safe at 145ºF (63ºC), but most people prefer the texture of a well cooked breakfast sausage.

    Broil for Extra Browning

    To get the exterior a little extra browned and crispy, I recommend broiling them for 1-3 minutes - but be sure to watch them very closely, as they can burn easily!

    Important: Make sure your baking sheet is broiler-safe before proceeding.

    Baking Sausage Patties

    Because sausage patties are a bit thinner than breakfast sausage links, they may require a little less time.

    Cook them at 425ºF (218ºC) for 12-14 minutes, and be sure to check the internal temperature to verify they are safely cooked through.

    How to Store Cooked Breakfast Sausages

    • Allow the sausages to cool completely.
    • Transfer them to an airtight container or storage bag.
    • Keep in the refrigerator for up to 3 days; freeze for extended storage.
    • Reheat before serving.

    Freezing Instructions

    After the sausages are cooled, transfer them to a parchment-lined baking sheet and place it in the freezer. Once the sausages are frozen solid, transfer them to a freezer bag or container.

    Label them with the contents and date, and store in the freezer for up to 3 months. Thaw before serving, or reheat from frozen.

    Reheating

    Reheat cooked sausages in the microwave in 30-second intervals until steaming hot. Alternatively, air fry them at 350ºF for 2-4 minutes, or until completely heated through.

    Recipe FAQs

    Can I bake breakfast sausages from frozen?

    Yes, although the best option is to thaw them first. If baking from frozen, be sure to add at least 10-15 minutes to the cooking time, and check the internal temperature to ensure they are safely cooked through.

    Can I double or triple the recipe?

    If you're preparing breakfast sausages for a big gathering like a holiday, breakfast buffet, etc, you can easily double, triple, or quadruple the recipe. You will need to change the size of the baking sheet according to how many sausages you are preparing (there needs to be some room in between each one), or work in batches.

    You will also need to add some additional cooking time for large amounts, so be sure to check for the correct internal temperature.

    Equipment

    • Baking sheet

    Ingredients

    • 16 breakfast sausage links or patties (see notes*)

    Instructions

    • Preheat the oven to 425ºF (218ºC).
    • Line a baking sheet with parchment paper, and fit it with an oven-safe cooking rack (optional - helps with even browning).
    • Space the breakfast sausages 1 inch apart on the baking sheet or cooking rack.
    • Bake in the preheated oven for 14-16 minutes, turning the sausages halfway through the baking time.
    • The sausages are done once they reach an internal temperature of 165ºF (74ºC) (they are safe at 145ºF (63ºC), but taste better when they are cooked a little longer).
    • If you want your sausages to be browned or extra crispy, stick them back into the oven and set the oven to broil. Cook for 1-3 minutes, or until cooked to your liking. But watch them carefully! (Note: Only do this if your baking sheet is broiler-safe)
    • Allow to cool for several minutes, then serve immediately or cool and store for later.

    *Breakfast sausage patties: These may need a little less time, since they are typically thinner. Cook them for 12-14 minutes, checking the internal temperature to ensure they are safely cooked through.
    From frozen: You will need to add another 10-15 minutes, and be sure to check the internal temperature to ensure they are safely cooked through.
    Storage: Allow the sausages to cool completely, then transfer them to an airtight container or storage bag. Keep in the refrigerator for up to 3 days, and reheat before serving.
    Freezing: Allow the cooked sausages to cool completely, then transfer them to a parchment-lined baking sheet. Place the baking sheet in the freezer until all of the sausages are frozen solid. Transfer them to a freezer bag or container, label, and store in the freezer for later use. Thaw before serving, or reheat from frozen. Freezes well for up to 3 months. 
    Reheating: You can reheat them in the microwave in 30-second intervals until steaming hot. Alternatively, you could add them to an air fryer set at 350ºF for 2-4 minutes, or until heated through.
