    Roasted Sweet Potato Cubes

    These Roasted Sweet Potato Cubes are the perfect side dish for any occasion! Sweet and savory flavor meet in this simple recipe, making it popular even with the pickiest of eaters.

    One of our favorite easy side dishes to make with nearly anything is this one! Seasoned and roasted sweet potato cubes are easy to pull together, taste amazing, and are a great addition to nearly any dish.

    Since they are peeled and sliced into smaller pieces, they are much quicker to make than classic baked sweet potatoes, meaning they are perfect for busy weeknights (or jam-packed weekends).

    • Meal prep hero. Sweet potatoes are great for meal prep, and this is our favorite way to make them. I know you'll love it too!
    • ​Versatile. Like different seasonings? Switch it up! Prefer to leave the sweet potato skin? Go for it! This recipe is easy to customize.

    Ingredients

    A bowl of cubed sweet potatoes, and various other ingredients including seasonings, oil, and salt and pepper.
    • Sweet potatoes: You will need about 2 pounds of sweet potatoes to make this recipe. To save time, you can buy cubed sweet potatoes at the grocery store that are already peeled and prepared.
    • Avocado oil (or olive oil): This helps the seasoning stick and prevents the sweet potatoes from burning in the oven.
    • Cinnamon: A classic flavor combination, this brings out the natural sweetness but can be left out (or swapped for chili powder) if you prefer.
    • Seasonings: Garlic powder, paprika, dried parsley, salt, and pepper.

    How to Roast Sweet Potato Cubes

    Before you get started: Slice your sweet potatoes into ¾" cubes. This can be done by peeling the potatoes, then slicing them into ¾" thick rounds, then into ¾" sticks, and finally slicing those strips across into ¾" pieces.

    1. Add the sweet potatoes to a large bowl, along with the oil and seasonings.
      • Top tip: I like to add the oil and seasonings to the bowl first, whisk, then add the sweet potato cubes. This ensures the seasonings are more evenly distributed.

    1. Fold everything together until the cubes are evenly coated in the seasoning and oil.

    1. Spread the seasoned sweet potatoes into an even layer on a parchment-lined baking sheet.

    1. Roast in a 425ºF (220ºC) oven for 25 minutes, or until tender with slightly crisp edges.

    Serving Tip

    These easy roasted sweet potatoes are perfect as-is, but if you want to add extra sweetness, a little drizzle of honey, hot honey, or maple syrup before serving is delicious!

    Storing Leftovers

    Transfer leftovers to an airtight storage container and keep refrigerated for up to 5 days. Reheat in portions (as needed) in the microwave until hot and steamy.

    If a crispy texture is desired, you can reheat them in the air fryer instead!

    Customizing Flavors

    Add or swap in your favorite seasonings such as chili powder, cumin, etc. You could even add aromatics like fresh garlic, red onions, or shallots. It's easy to tailor this recipe to your personal preference!

    Air Fryer Instructions

    If you would like crispy roasted sweet potatoes, I highly recommend using the air fryer method instead of the oven method.

    1. Preheat your air fryer basket to 400ºF (200ºC).
    2. Add half of the seasoned sweet potatoes to the air fryer basket.
    3. Cook for 10-12 minutes, shaking the basket halfway through.
    4. Repeat with the remaining half of the sweet potatoes.

    Expert Tips

    • Add them to your favorite recipes. We love to add these savory sweet potatoes to all kinds of main dishes, or pair them with proteins for quick and easy meal prep.
    • Make sweet potato tacos. These are phenomenal when served with black beans, red onions, and corn. Just swap out the listed seasonings for your favorite taco seasoning. Yum!
    • Switch up the seasoning. Depending on the flavor profile you're going for, you can switch out the spices. We love to make a version with chili powder (no cinnamon), cumin, or even taco seasoning.

    Ingredients

    • 2 pounds sweet potatoes peeled and cubed (about ¾” wide*)
    • ¼ cup avocado oil or olive oil
    • 1 teaspoon salt
    • ¼ teaspoon black pepper
    • 1 teaspoon ground cinnamon
    • ½ teaspoon paprika
    • ½ teaspoon garlic powder
    • ½ teaspoon dried parsley
    • 2 teaspoons honey or hot honey (optional; for topping)

    Instructions

    • Preheat the oven to 425ºF (220ºC) and line a rimmed baking sheet with parchment paper. Set aside.
    • Add the avocado oil, salt, black pepper, cinnamon, paprika, garlic powder, and dried parsley to a large bowl. Whisk well to combine.
    • Peel and cube the sweet potatoes, and add the cubes to the seasoning and oil. Toss well to coat them evenly.

    • Bake in the preheated oven for 25 minutes, or until the potatoes are tender (easily pierced with a fork) with some crispy edges.

    Notes

    *Making sweet potato cubes: Peel each sweet potato, and then slice it into ¾" thick rounds. Cut each round into ¾" thick strips lengthwise, and then widthwise. You now have ¾" sweet potato cubes.
    Storage: Transfer any leftovers to an airtight container and keep in the refrigerator for up to 5 days. Reheat portions as needed in the microwave or air fryer until hot and steamy.
    Less oil: This recipe can be made with less oil if desired. You can reduce it by half (so 2 tablespoons), but any less may cause the sweet potatoes to scorch.
