Ingredients
2poundssweet potatoespeeled and cubed (about ¾” wide*)
¼cupavocado oilor olive oil
1teaspoonsalt
¼teaspoonblack pepper
1teaspoonground cinnamon
½teaspoonpaprika
½teaspoongarlic powder
½teaspoondried parsley
2teaspoonshoneyor hot honey (optional; for topping)
Instructions
Preheat the oven to 425ºF (220ºC) and line a rimmed baking sheet with parchment paper. Set aside.
Add the avocado oil, salt, black pepper, cinnamon, paprika, garlic powder, and dried parsley to a large bowl. Whisk well to combine.
Peel and cube the sweet potatoes, and add the cubes to the seasoning and oil. Toss well to coat them evenly.
Transfer the seasoned sweet potato cubes to the prepared baking sheet, spreading them out into a single layer.
Bake in the preheated oven for 25 minutes, or until the potatoes are tender (easily pierced with a fork) with some crispy edges.
If desired, drizzle with honey (or hot honey) before serving.
Notes
*Making sweet potato cubes: Peel each sweet potato, and then slice it into ¾" thick rounds. Cut each round into ¾" thick strips lengthwise, and then widthwise. You now have ¾" sweet potato cubes.Storage: Transfer any leftovers to an airtight container and keep in the refrigerator for up to 5 days. Reheat portions as needed in the microwave or air fryer until hot and steamy.Less oil: This recipe can be made with less oil if desired. You can reduce it by half (so 2 tablespoons), but any less may cause the sweet potatoes to scorch.Air fryer: Cut the recipe in half (or work in 2 batches) and air fry at 400ºF (200ºC) for 10-12 minutes, shaking the basket halfway through.
