Ingredients
1 ½cupsplain Greek yogurt
1packagesugar-free Jell-Oflavor of choice
½cupboiling water*
½teaspoonvanilla extractoptional; recommended for orange flavor*
Instructions
Add the boiling water to a medium bowl, then pour in the sugar-free Jell-O mix. Whisk well until the powder completely dissolves.
Transfer about half of the yogurt to the bowl, whisking gently until it’s fully incorporated.
Add the remaining Greek yogurt to the bowl and whisk until smooth and lump-free.
If desired, stir in ½ teaspoon of vanilla extract (we like this for the orange flavor – it gives it a “creamsicle” flavor).
Either cover the bowl tightly or pour into 2 separate bowls (or parfait glasses) and cover with plastic wrap.
Chill in the refrigerator for 1-2 hours or until completely set.
Serve and enjoy! Add a dollop of whipped cream, fresh fruit, or orange zest if desired.
