This easy recipe for Church Lady Rice features French onion soup, beef consommé, canned mushrooms, and yes – a whole stick of butter!

Ingredients
1cuplong-grain ricenot instant
1can (10.5oz)French onion soupsometimes called onion soup
1can (10.5oz)can consommeor 1 ¼ cups beef broth
1can (8oz)mushroom pieces and stemsdrained (or 1 cup of sauteed fresh mushrooms)
½cupbuttersliced into 8 squares
Instructions
Preheat the oven to 400ºF (204ºC) and lightly grease a medium-sized baking dish (9x9” or 10 x 7.5”; see notes for using a 9x13 baking dish).
Add the rice, french onion soup, consomme, and mushrooms to the baking dish. Stir well to combine,
Top the rice evenly with the slices of butter, then wrap the baking dish very tightly with aluminum foil (or a well-fitting lid).
Bake in the preheated oven (covered) for 30 minutes.
Remove the rice from the oven and uncover it, stirring everything together.
Return the rice to the oven to bake for an additional 30 minutes, leaving it uncovered.
Once the time is up, remove the baking dish from the oven and allow it to rest for 10 minutes.
After it has rested for 10 minutes, fluff the rice with a fork and garnish with parsley (if desired). Serve and enjoy!

Storage: Immediately transfer leftovers to an airtight container. Store in the refrigerator for up to 3 days, reheating portions as needed in the microwave.Using a 9x13” baking dish: I recommend using a medium baking dish for the best results, but if desired you can use a standard 9 X 13” casserole dish instead. When doing so, I recommend doubling the recipe as it prevents the rice from drying out too much. I like to increase the baking time by about 5 minutes to account for the larger amount of rice.What type of butter is best? There is plenty of salt in the other ingredients, so unsalted butter is a good choice, although I’ve often used salted butter with no ill effects.Should the rice be rinsed? This recipe has been tested with unrinsed rice, but you can use rinsed rice if you prefer to do so. You may need to reduce the liquid by about 1-2 tablespoons if you don’t like very moist rice.Using French onion soup mix: If you don't have a can of French Onion soup you can use 1 packet of French Onion soup mix plus 1 ¼ cups of water (or beef broth) instead.
