Preheat the air fryer to 400ºF (204ºC) for at least 3 minutes, or according to the manufacturer’s instructions.
Cut each potato in half or quarters, depending on their size. You want each piece to be about 1 inch. Place the potatoes in a large bowl.
Drizzle the olive oil over the potatoes, then sprinkle in the salt, pepper, garlic powder, onion powder, and paprika.
Toss the potatoes well until they are evenly coated in the oil and spices.
Arrange the potatoes in a single layer in the air fryer basket.
Cook for 16-20 minutes (or until the potatoes are tender), shaking the basket halfway through. Oven-style air fryers may require additional time (2-3 minutes).
Remove from the air fryer and serve with ketchup or your favorite dipping sauces. For extra flavor, sprinkle on some grated parmesan cheese.

Storing leftovers: Transfer any leftovers to an airtight container for up to 3-4 days. Reheat in the air fryer or in the microwave. Oven method: Roast in a 425ºF (218ºC) for 30-35 minutes, tossing them halfway through.
