This easy recipe for Air Fryer Chicken Sausage and Veggies is an instant weeknight classic (or meal prep staple). Quick, easy, and delish!

Ingredients
4chicken sausagescut into rounds ½ - ¾ inches thick (seasoned*)
2bell pepperschopped (I used one orange and one red)
1smallzucchinicut into half moons
1mediumred onionpeeled and chopped
2tablespoonsolive oilor avocado oil
¼cupshredded parmesan cheese(optional)
Seasonings:
1teaspoonpaprika
1teaspoongarlic powder
1teaspoononion powder
½teaspoondried basil(optional)
½teaspoonsalt
¼teaspoonground black pepper
Instructions
Add the olive oil and all of the seasonings to a large bowl. Stir well to form a thin paste.
Transfer the chopped vegetables and sliced chicken sausages to the bowl. Gently fold them together until evenly coated in the seasoned oil.
Preheat your air fryer basket to 400ºF (200ºC) for at least 3 minutes, or according to the manufacturer's instructions.
Transfer half of the vegetable and sausage mixture to the air fryer, spreading it out in an even layer.
Cook for 8-11 minutes, or until the sausage pieces are browned and reach a minimum internal temperature of 165ºF (74ºC).
Transfer the cooked sausage and vegetables to a serving bowl and cook a second batch with the remaining half.
If desired, sprinkle with shredded parmesan cheese before serving.
Notes
Serving: This recipe is delicious as is, but tastes extra amazing when served with hot cooked rice (or cauliflower rice). It’s also delicious with potatoes.Storing leftovers: Transfer any leftovers to an airtight container and refrigerate for up to 3-4 days. Reheat portions as needed before serving. We do not recommend freezing leftovers.*Chicken sausages: For the best results, use your favorite seasoned or flavored chicken sausages. We primarily used mild Italian, but tried other flavors with success. The recipe is developed for uncooked sausages, but pre-cooked or smoked sausages are fine to use.Slicing chicken sausages: We recommend using a serrated knife to slice the sausages into ½-3/4" rounds. Other veggies: We used tender vegetables since they cook more quickly. Feel free to use the vegetables for your favorite tender veggies. If you decide to use starchy veggies, you will need to lengthen the cooking time.
