Preheat the air fryer to 400ºF for at least 3 minutes, or according to your manufacturer's instructions.
Add the olive oil, salt, black pepper, and garlic powder to a large bowl. Whisk well to combine.
Transfer the halved baby potatoes to the seasoned oil, and toss well with tongs to coat the potatoes in the oil mixture.
Add the seasoned potatoes to the basket or tray of your air fryer, spreading them out in an even layer.
Cook for 13-15 minutes, shaking the basket halfway through to ensure even browning.
Once the potatoes are easily pierced with a fork they are ready.
Transfer them to a serving bowl (if desired) and toss them with the fresh minced parsley. Serve and enjoy!
