Air Fryer Baby Potatoes

Ingredients

  • 1 ½ pounds baby potatoes halved
  • 2 tablespoons olive oil
  • ¾ teaspoon salt
  • ½ teaspoon ground black pepper
  • ¾ teaspoon garlic powder or 3 cloves, minced
  • 2 tablespoons fresh minced parsley optional

Instructions

  • Preheat the air fryer to 400ºF for at least 3 minutes, or according to your manufacturer's instructions.
  • Add the olive oil, salt, black pepper, and garlic powder to a large bowl. Whisk well to combine.
  • Transfer the halved baby potatoes to the seasoned oil, and toss well with tongs to coat the potatoes in the oil mixture.
  • Add the seasoned potatoes to the basket or tray of your air fryer, spreading them out in an even layer.
  • Cook for 13-15 minutes, shaking the basket halfway through to ensure even browning.
  • Once the potatoes are easily pierced with a fork they are ready.
  • Transfer them to a serving bowl (if desired) and toss them with the fresh minced parsley. Serve and enjoy!

Notes

Olive oil: Feel free to substitute for your favorite cooking oil. Avocado oil works well because of its high smoke point.
Potato varieties: You can use any type of baby potato, including red, white, or Yukon Gold. You can also use fingerling potatoes as long as you slice them lengthwise.
Herbs: If you like, add your favorite herbs and spices such as sage, rosemary, thyme, etc. I would recommend adding them toward the end of the cooking time, or once the potatoes are fully cooked. Herbs can burn quickly in the heat of the air fryer.
