Equipment

Ingredients

  • 1 pound boneless, skinless chicken breast cut into strips (approximately 2 breasts)
  • 1 red bell pepper cut into strips
  • 1 yellow or orange bell pepper cut into strips
  • 1 large yellow or white onion peeled and cut into strips
  • 1 tablespoon avocado oil or any neutral oil

Fajita Seasoning

  • 2 teaspoons chili powder
  • ¾ teaspoon salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper

Instructions

  • Preheat your air fryer to 390ºF (200ºC) for at least 3 minutes, or according to your manufacturers instructions.
  • Add the oil and fajita seasonings to a large bowl. Whisk well to combine, then add in the chicken. Toss well to coat the chicken in the oil and seasoning.
  • Add in the sliced onion and bell peppers. Toss well to coat them lightly in the oil and seasoning.
  • Add to the basket of your air fryer, and cook for 15-17 minutes, shaking the basket at the halfway point.
  • Cook until an internal temperature of 165ºF (74ºC) is reached in the thickest parts of the chicken pieces.
  • Remove from the air fryer and serve immediately.

Notes

In Batches: If your air fryer is smaller, you may want to try cooking your fajitas in batches to ensure everything is evenly cooked.
Using Store Bought Seasoning: Sub the spices for 1 packet or 2 shallow tablespoons of store bought seasoning.
Serving suggestions: The traditional way to serve fajitas is with flour tortillas, sour cream, cheese, pico de gallo, cilantro, etc.
If you want to keep this dish keto and low carb, you can serve on top of a salad, alongside some steamed veggies, or with cauliflower rice. You could also serve it traditional style with a low carb tortilla.
To keep your chicken fajitas gluten free, serve over hot cooked rice, with a gluten free tortilla, or on top of a bed of lettuce.
