Instant Pot Wild Rice Blend

This Instant Pot Wild Rice Blend is perfectly cooked, flavorful, and great for serving with a variety of dishes. Slightly chewy, nutty, and hearty, it's a bowl of rice that can hold its own!

Equipment

Ingredients

  • 1 ½ cups wild rice blend
  • 1 ½ cups water
  • 1 teaspoon salt
  • 1 teaspoon avocado oil

Instructions

  • Add the wild rice to the insert of a 6 or 8 quart Instant Pot.
  • Add in 1 ½ cups of cool water, the salt, and avocado oil. Stir well to combine.
  • Place the lid on the Instant Pot and set the valve to "sealing". Set to manual pressure and set the timer for 27 minutes.
  • Once the pot beeps to indicate pressure has been achieved, it will cook for the 27 minutes and switch to the warm function.
  • Allow the pot to do a 15 minute natural pressure release (NPR). This is done by allowing the time clock on the warm function to count up to 15 minutes in elapsed time.
  • Once the natural pressure release time is up, flip the valve to "venting" and allow any excess steam to escape.
  • Once the pin drops, indicating the pressure has been released, carefully open the lid away from your face.
  • Fluff the rice with and fork and taste. Adjust the salt to your taste, or add any desired seasonings.
  • Serve and enjoy!

Notes

Larger batches: You can make larger batches by increasing all of the ingredients to scale. The important thing to remember is that you do not want to exceed the fill line of your Instant Pot, and I would even recommend you stay far below it since rice can expand quite a bit.
Smaller batches: 6qt Instant Pots need a minimum of 1 cup of liquid to come to pressure, and the 8qt model needs a minimum of 1 ½. So if your model is the 8 quart model, keep the recipe as written, but if your pot is a 6qt model you can scale down to a minimum of 1 cup of rice and 1 cup of water.
