Sweet Potato Casserole

This simple recipe for Sweet Potato Casserole with Pecans is always a winner at Christmas dinner.  A crowd-pleasing casserole that is perfect for all kinds of special occasions, and can even be made up to 2 days ahead of time!

Let’s get started!

Boil the sweet potatoes

Peel and cube your sweet potatoes and add them to a pot of water. Bring to a boil and cook until tender (10-14 minutes).

Mash the potatoes

Drain the potatoes and mash them with butter.

Add the remaining ingredients

Add the sugar, cinnamon, nutmeg, heavy cream, vanilla, salt, and eggs.

Add to a casserole dish.

Spread the sweet potato mixture into a baking dish.

Make the topping

Combine the flour, brown sugar, and butter until it resembles coarse crumbs. Stir in some chopped pecans.

Sprinkle on the topping

Sprinkle the pecan streusel mixture on top of the sweet potato layer.

Bake

Bake for 40-45 minutes, or until the the pecans are toasted with browned edges.

Serve

Cool, then scoop portions onto a plate and enjoy!
