This creamy recipe for Loaded Baked Potato Soup is a family-favorite recipe. A silky and cheesy potato base is topped with crisp bacon, green onions, shredded cheese and a dollop of sour cream.

Add the bacon pieces to a large pot over medium heat and cook until crisp. Remove the bacon to drain on a paper towel-lined plate.

Allow the pot to cool, then add the onions and sauté until translucent. Then add the garlic.

Add cubed russet potatoes to the pot, along with seasonings.

Add the broth and simmer until the potatoes are tender - about 10-15 minutes.

Use an immersion blend to puree most of the potatoes, creating a thickened soup.

Add in the sour cream, heavy cream, and shredded cheese. Stir and heat until warmed through.

Simmer until thickened slightly and the cheese melts. Taste and adjust salt and pepper to your taste.

Ladle servings into bowls and top with the cooked bacon, chopped green onions, shredded cheese, and a dollop of sour cream (optional).
