Cadbury Mini Egg Cookies

The BEST Easter Dessert!

These Mini Egg Easter Cookies are SO delicious, soft, and super easy to make.  Great for bringing to Easter dinner, or a creative way to use leftover Easter candy.

Let’s get started!

Making the cookie dough


Add the butter, brown sugar, and granulated sugar to a mixing bowl and beat until creamy.

Add in the eggs and vanilla


Add 2 large eggs and some vanilla extract to the creamed butter and sugar mixture.

Whisk the dry ingredients


Combine the flour, salt, and baking soda. Whisk well and set aside.

Making the cookie dough


Add the dry ingredients to the wet ingredients and mix to combine. Then, add in crushed mini eggs.

Bake the cookies


Bake the cookies in an oven that has been preheated to 375F for 10-12 minutes.

Cool and Serve


Allow the cookies to cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool to room temperature.
